Title: Fried Zucchini Blossoms

1 | c | All-purpose flour |
1 | ts | Curry powder |
1/4 | ts | Salt |
1 | c | Chilled club soda |
1/4 | lb | Mozzarella cheese; coarsely - grated |
1 | tb | Finely chop'd fresh cilantro |
16 | Zucchini blossoms; pistils - removed if desired * | |
Canola oil for deep-frying |
Mix together flour, curry powder, and salt. Add club soda; mix until smooth. Let batter stand 10 minutes. In a small bowl toss mozzarella and cilantro. Stuff 1 tablespoon into each blossom, pressing ends of blossom closed. Heat 1 inch oil in skillet (375ø F). Dip the filled blossoms one at a time in batter. Coat completely. Fry, turning once, until golden and crisp. Drain on paper towels; sprinkle with salt. Serve warm.
