Title: Chopped Chicken Liver

1/2 | c | Chicken fat; or shortening |
2 | Onions; chopped | |
1 | lb | Chicken livers; washed and drained |
2 | Eggs; hard-boiled | |
Salt and pepper to taste |
Melt 1/4 cup chicken fat in pan. Add onions. Sautee until light. Brown about 10 minutes. Remove onions and set aside. Melt remaining chicken fat and broil livers until cooked. Chop onions, liver, and egg until very fine. Add salt and pepper. Mix well. Chill. Add mayonnaise or chicken fat if necessary for a creamy consistency and ease in spreading.
