Title: Noel's Pumpkin Curls - Ba 10/84

1 | lb | Wedge of pumpkin |
Peanut oil (for deep frying) | ||
1 | 1" x 3/4" chunk fresh ginger ;finely grated |
Cut pumpkin into 2-inch to 3-inch-wide wedges. Discard stringy interior. Starting at inside, peel off paper-thin strips of peel down full length of wedges, using vegetable peeler. (Can be prepared one day ahead. Cover and refrigerate.)
Preheat oven to 200 degrees F. Line baking sheets with paper towels. Heat oil in large saucepan to 375 degrees F. Fry ginger until golden brown, about 1 minute. Transfer to prepared sheets, using slotted spoon. Keep warm in oven. Fry pumpkin in batches (do not crowd) until brown and crisp, about 1 minute, skimming oil between batches. Transfer to prepared sheets, using slotted spoon or tongs and keep warm in oven. Alternate layers of pumpkin and fried grated ginger in napkin-lined basket. Serve immediately.
