8 | oz | Cyprus Halloumi cheese |
For the dressing | ||
3 | tb | Extra virgin olive |
1 | tb | White wine vinegar |
1 | ts | Lemon zest |
1 | tb | Fresh lemon juice |
1 | ts | Crushed coriander seeds |
1 | tb | Chopped fresh coriander |
Leaves | ||
1 | Clove garlic, finely | |
Chopped | ||
1 | ts | Grain mustard |
1 | tb | Capers, drained |
Salt and freshly ground | ||
Black pepper | ||
To garnish | ||
Few sprigs of coriander or | ||
Flat parsley |
Prepare dressing by whisking all the ingredients together in a small bowl.
Slice the Halloumi cheese into 4 slices, place under a hot grill and grill on both sides until golden brown.
Place Halloumi slices on warmed plates and pour dressing over the cheese.
Garnish with sprigs of coriander or flat parsley and serve with toasted pita bread.
