Title: Italian Sausage Empanadas

Yield: 20 Empanadas
1 | lb | Bulk Italian-sausage |
1 | cn | Pizza sauce; (14oz) |
2 | cn | Refrigerated flaky biscuits |
. (10oz each) | ||
4 | oz | Mozzarella cheese; shredded |
. or cut into small cubes | ||
1 | Egg; beaten |
In a large skillet over medium heat, brown sausage; drain. Stir in 6 Tbsp of the pizza sauce.
Preheat the oven to 375øF. Separate the dough into 20 biscuits. Roll or press each round into a 4-inch circle.
Place 1 Tbsp meat mixture in center of each circle. Top each with cheese; press lightly. Fold dough over filling to form half-circle. Press edges together; seal and prick top with fork. Place on ungreased cookie sheet; brush with beaten egg. Bake 9 to 14 minutes or until golden brown.
Meanwhile, heat the remaining pizza sauce in a small saucepan over low heat until hot. Serve alongside empanadas for dipping.
