2 | lb | Pork tenderloin |
1 | tb | Butter |
1 | tb | Olive oil |
1 | tb | Flour |
2/3 | c | Vegetable stock |
2/3 | c | Heavy cream |
2/3 | c | Dry cider |
1 | | Pear, peeled, cored and sliced |
2 | c | Pitted and sliced plums |
Slice the pork tenderloin, and trim off any excess fat. Heat the butter and
oil in a skillet, then add the pork and fry for 10 minutes, stirring
constantly. Add the flour, and cook for 1 minute longer. Stir in the stock,
cream and cider, then bring to a boil. Reduce the heat, and simmer for 15
minutes. Stir in the pear and plums, then simmer for an additional 5
minutes.
