Title: Some Like It Hot (Salsa Verde)

2 | lb | Tomatillos |
6 | lg | Jalapenos |
6 | Roasted and peeled Hatch | |
Green chiles | ||
1 | md | White onion |
1/2 | c | Chopped cilantro |
1 | Lime, juice of | |
1/2 | c | Water tomatillos cooked in |
6 | Green onions | |
6 | cl | Garlic |
1 | tb | Salt |
Husk tomatillos and boil in 4 quarts of water with 4 oz. of vinegar for 5-7 minutes. Dice all other ingredients medium to fine. PPlace tomatillos and half of chopped ingredients in food processor and puree. Place puree and other half of choppped ingredients in saucepan and cook on medium high for 10 minutes. Cool and refrigerate.

Note: Salsa rojo can be made by substituting vine ripe tomatatoes for the tomatillos.
