Title: Citrus Chicken

1/4cButter
4 Boneless chicken breast halves, skinned
  Grated zest and juice of 2 oranges
1 Orange, peeled and cut into segments
3tbClear honey
2/3cVegetable stock
  Watercress, to garnish

Melt the butter in a pan, and fry the chicken for 10 minutes, turning frequently, until browned. Add the orange zest, juice and segments, honey and stock. Cook for 20 minutes, or untill the juices run clear when each piece is pierced with the tip of a knife. Garnish with watercress, and serve with freshly cooked rice.
