Title: Steak Diablo

Yield: 1 Servings

2tbOlive oil
1mdYellow onion, diced fine
1/2cFresh garlic, chopped fine
2cGreen chile peppers, roasted
  Peeled, seeded, chopped
2tsDried oregano (Mexican
  Prefered)
  Salt to taste
12slProvolone, cut in half

enough for eight 6 oz steaks (New York, etc).

Heat olive oil over medium heat, add garlic and onion. Saute until onion turns transparant, 5-6 min. Add green chile, oregano and salt, cook another 5 minutes and remove from heat.

Grill steaks until 2/3 done (maybe 3-4 min/side). Place steaks in preheated broiler, top with green chile sauce and provolone.. Broil 1-2 min until cheese is melted and steaks are done. From the Chile-Heads Recipe Collection URL: http://chile.ucdmc.ucdavis.edu:8000/www/recipe.html
