Title: Steak Diablo

2 | tb | Olive oil |
1 | md | Yellow onion, diced fine |
1/2 | c | Fresh garlic, chopped fine |
2 | c | Green chile peppers, roasted |
Peeled, seeded, chopped | ||
2 | ts | Dried oregano (Mexican |

Salt to taste | ||
12 | sl | Provolone, cut in half |
enough for eight 6 oz steaks (New York, etc).
Heat olive oil over medium heat, add garlic and onion. Saute until onion turns transparant, 5-6 min. Add green chile, oregano and salt, cook another 5 minutes and remove from heat.
Grill steaks until 2/3 done (maybe 3-4 min/side). Place steaks in preheated broiler, top with green chile sauce and provolone.. Broil 1-2 min until cheese is melted and steaks are done. From the Chile-Heads Recipe Collection URL: http://chile.ucdmc.ucdavis.edu:8000/www/recipe.html
