Title: Lobster with Spicy Sauce

2 | lb | Lobster |
2 | oz | Ginger |
2 | oz | Spring onion |
2 | Shallot | |
2 | Garlic | |
SAUCE: | ||
1 | tb | Salt |
2 | ts | Sugar |
1 | tb | Wine |
1 | c | Stock |
1/4 | c | Catsup |
1 | Chili pepper | |
Few drops vinegar |
Wash lobster thoroughly. Chop lobster into big pieces. Crack pincers lightly. Coat evenly with cornstarch. Heat the wok until very hot, add a few cups of oil and bring to boiling. Parboil lobster and drain.
Shred ginger and spring onion. Slice garlic and shallot. Heat oil in wolk. Saute shallot and garlic to release flavors. Add lobster to stir fry. Sprinkle lobster with wine, add stock and bring to boil. Season to taste, cover with lid and simmer for a few minutes or until gravy nearly evaporates. Quickly add ginger and spring onion, stir well. Shredded chili peppers can be added if spicy hot flavor is preferred.
