Title: Delicat Snow Pea Soup^

Yield: 6 Servings
4 | c | Chicken sock |
1 | c | Finely chopped bok choy |
1/4 | c | Thinly sliced mushrooms |
2 | oz | Tofu, cut in small cubes |
1 | cl | Garlic, minced |
3/4 | ts | Grated ginger |
1 | ts | Low sodium soy sauce |
1 | c | Fresh snow peas |
1/4 | c | Diced green onions with tops |
1 | Egg white, lightly beaten, optional |
Bring all ingredients except snow peas, green onions and egg whites. Simmer 20 minutes. Add snow peas and green onion. cook 5 minutes; slowly stir in egg white, if desired, to make a ribon effect. Makes 6 servigs.
Variation: For a creamy soup, add 1 heaping teaspoon cornstarch mixed incold water plus 1/2 teaspoon light soy sauce. Add to soup, heat until thick and bubbly.
