Offering more of an exotic quality than taste, these are brittle when dry, but when soaked in hot water they soften and become chewy with a woodsy flavor. Golden needles are about three inches long, have an orange to golden brown color, and are used in hot-and-sour soup and mu shu dishes. Sold prepackeaged in Asian groceries, they will keep for years in a tightly closed har on the pantry shelf, although they do darken after several years.
