This Chinese cabbage is similar in taste and appearance to celery cabbage, but the leaves are broader, whiter, and more crinkly, and the head is more stout. It is sometimes impractical to buy nappa because it may not be possible to use up the large heads usually available. Celery cabbage is a good substitute. Store nappa in the refrigerator; soak limp leaves in cold water to restore freshness.
