Rice Noodles are similar to cellophane noodles in appearance and texture, but they have much more of their own flavor when cooked. Made of rice flour, they hvae a grainy taste reminiscent of rice. They are brittle when dry and become soft when soaked in warm or hot water. Rice noodles are used in stir-fried dishes and soups.
Like cellophane noodles, uncooked rice noodles puff up in hot oil and are used as a garnish. Do not soak the rice noodles that are to be deep-fried, as they will become brittle. Rice noodles are related to rice sticks or rice stick noodles, which are considerably wider.
