Title: Chicken Kebabs

2 1/2 | c | Skinned and diced chicken breast |
1/2 | c | Red seedless grapes |
12 | Lychees, peeled | |
12 | Ground cherries, peeled | |
1 | Green bell pepper, seeded and diced | |
8 | Cherry tomatoes | |
MARINADE | ||
1 | tb | Olive oil |
1 | tb | Clear honey |
1 | ts | Lemon juice |
1 | Garlic clove, crushed | |
1 | tb | Chopped fresh parsley |
Put the chicken into a shallow dish with the grapes, lychees, ground cherries, bell pepper and tomatoes. Mix the marinade ingredients together, and pour over. Cover and chill for 1 hour.
Thread the chicken and fruit onto skewers, and cook, turning once, under a medium-hot broiler for 10 to 15 minutes, or until the juices run clear when each piece of chicken is pierced with the tip of a knife. Serve with salad.
