There is no duck in this meatless condiment--the name is derived from the preparation's use as a dip or sauce for roast duck. Duck sauce is usually made from apricots or peaches, vinegar, sugar, and corn syrup; however, it is the sweet and pungent taste that comes through more than the fruity taste. In Chinese-American restaurants, this reddish-brown condiment is usually set out with hot mustard and fried noodles.
There are many brands of duck sauce on the market. Asian groceries and most supermarkets sell it in jars or containers ranging in size from six ounces to one gallon. Duck sauce keeps very well refrigerated.
