Title: Chocolate Orange Mousse - Glorious Liqueurs

1/2 | lb | Bitter- or semisweet |
Chocolate, melted | ||
6 | Extra large eggs, separated | |
1/4 | c | Freshly squeezed orange |
Juice | ||
6 | tb | Sugar, divided |
1/4 | c | Grand Marnier or other |
Orange liqueur | ||

Combine egg yolks with orange juice and 2 tablespoons of the sugar and cook over low heat, beating vigorously with a wire whisk until the yolks begin to thicken. Slowly pour in liqueur and continue cooking and beating until mixture is very thick. Remove from heat.
Pour into a large bowl, fold in the melted chocolate and set aside.
Beat egg whites with a pinch of salt until they are foamy. Gradually beat in the remaining sugar, a little at a time, until stiff but not dry peaks form.
Beat cream with orange peel until stiff peaks form.
Fold the whipped cream, then the egg whites, into the chocolate mixture. Spoon into serving bowl. Chill at least 2 hours. If desired, decorate the outer edge of the mousse with rosettes or dollops of whipped cream, orange peel curls and shaved chocolate.
