Carob is rich in natural sugar, low in starch, low in fat, (less than 2% fat compared with 53% in chcolate) and rich in minerals, with trace amounts of the B vitamins. In recipes that call for solid chocolate, use 3 T. of carob powder plus 2 T. water or milk to equal one square.
