White chocolate isn't real chocolate, but the best is made with cocoa butter, the fat that's extracted from the cocoa bean during the making of chocolate.

You can choose the best white chocolate by reading the label. Look for a product made with cocoa butter rather than vegetable oils.

Vegetable oils improve the shelf life and increase the melting point of chocolate, but they don't do much for the flavor.

White chocolate made with cocoa butter is not as sweet and is more buttery than products made with oils.

Some products contain both. Baker's Premium White Chocolate Baking Squares has struck a nice balance with theirs.
