Title: "Our" Mayonnaise^

1 1/2 | c | Lowfat cottage cheese, drained |
1 | tb | Apple juice concentrate |
2 | tb | Apple cider vinegar |
1 | Egg white | |
2 | tb | Fresh lemon juice |
1 | ts | No salt added Dijon Mustard |
3/4 | ts | Onion powder |
1 | ts | Low sodium soy sauce |
Place all ingredients in a food procesor fitted with the metal blade. Process 4-5 minutes until creamy and smooth. Pour into a glass container, cover and refrigerate overnight. Makes 2 1/2 cups.
Variations: Season with curry powder, fresh minced garlic, grated horseradish, crushed pineapple, chives or salsa.
