Title: Skillet Balls

Yield: 4 Dozen
1/2 | c | Margarine; softened |
3/4 | c | Sugar |
2 | Eggs | |
1 | pk | Dates; (7oz) chopped fine |
1 | c | Pecans; chopped fine |
3 | c | Rice Krispies |
1 | tb | Vanilla |
1/2 | ts | Salt |
1 1/2 | c | Flaked sweetened coconut |
Combine the softened margarine, sugar and eggs; beat well. Add chopped dates. Cook this mixture in a heavy skillet until slightly thickened, between 10 and 20 minutes on low heat, stirring constantly with a wooden spoon. Remove from heat; add nuts, cereal, vanilla and salt. Mix well; cool.
Make small balls of the cooked mixture no larger than walnuts. Roll the balls in coconut until covered.
Makes about 4 dozen.
