Yield: 48 Cookies
1 | c | Butter or margarine; softend |
1 | c | Brown sugar |
1 | c | Granulated sugar |
1 | ts | Baking powder |
1/4 | ts | Salt |
2 | Eggs; slightly beaten | |
2 | c | Corn flakes; finely crushed |
2 | c | Minute oats |
2 | ts | Vanilla *OR* |
2 | ts | Orange peel; grated |
1/2 | c | Pecans; chopped |
Preheat oven to 325øF. Cream together butter or margarine, sugars, baking powder and salt. Add eggs, corn flakes, oats, vanilla or orange peel and the pecans. Mix thoroughly. Drop by spoonfuls onto an ungreased baking sheet and bake until slightly brown on edges, about 8 minutes. Remove while still hot. After 3 days they will become chewy.
Makes about 48 cookies.
