Title: Prawns with Ricotta Cheese

125 | g | Fresh ricotta cheese (4 oz) |
1/2 | c | Water |
2 | lg | White onions, chopped |
3 | Garlic cloves, chopped | |
3 | c | Tomatoes, chopped, very ripe |
1 | tb | Tomato paste |
1 | c | White wine |
2 | tb | Parsley, chopped, fresh |
1 | ts | Dried Oregano |

1. Dice Ricotta Cheese and lightly toast under griller. Set aside. 2. Bring water to the boil. Add onions and garlic. Reduce heat and simmer for 3-4 minutes. 3. Add tomatoes tomato paste, white wine, parsley, oregano and pepper. Cover and simmer for 30 minutes. 4. Add prawns and cook for 12 minutes until tender. Top with ricotta cheese cubes and garnish with extra chopped parsley.
Serves 4-6
