Title: Cod Creole

Yield: 4 Servings
450 | g | (1lb) cod fillets, skinned |
1 | tb | (15ml) lime or lemon juice |
2 | ts | (10ml) olive oil |
1 | md | Onion, finely chopped |
1 | Green pepper, seeded and sliced | |
1/2 | ts | (2.5ml) cayenne pepper |
1/2 | ts | (2.5ml) garlic salt |
400 | g | (14oz) can chopped tomatoes |
Cut the cod fillets into bite-sized chunks and sprinkle with the lime or lemon juice.
In a large, non-stick pan, heat the olive oil and fry the onion and pepper gently until softened. Add the cayenne pepper and garlic salt.
Stir in the cod with the chopped tomatoes. Bring to the boil, then cover and simmer for about 5 mins, or until the fish flakes easily. Serve with boiled rice or potatoes.
