Title: Oaty Herrings with Red Salsa

2 | tb | (30ml) skimmed milk |
2 | ts | (10ml) Dijon mustard |
2 | lg | Herrings, filleted |
2/3 | c | (50g/2oz) rolled oats |
Salt & black pepper | ||
FOR THE SALSA | ||
1 | sm | Red pepper, seeded |
4 | md | Tomatoes |
1 | Spring onion, chopped | |
1 | tb | (15ml) lime juice |
1 | ts | (5ml) caster sugar |
* Herrings are one of the most economical and nutritious fish. If you buy them ready filleted, they're much easier to eat than the whole fish * Preheat the oven to 200øC/400øF/Gas 6. To make the salsa, place the pepper, tomatoes, spring onion, lime juice, sugar and seasoning in a food processor. Process until finely chopped.
Mix the milk and mustard, and the oats and pepper. Dip fillets into the mustard mixture, then oats to coat.
Place on a baking sheet, then bake for 20 mins. Serve with the salsa.
