Title: Oaty Herrings with Red Salsa

Yield: 4 Servings

2tb(30ml) skimmed milk
2ts(10ml) Dijon mustard
2lgHerrings, filleted
2/3c(50g/2oz) rolled oats
  Salt & black pepper
FOR THE SALSA
1smRed pepper, seeded
4mdTomatoes
1 Spring onion, chopped
1tb(15ml) lime juice
1ts(5ml) caster sugar

* Herrings are one of the most economical and nutritious fish. If you buy them ready filleted, they're much easier to eat than the whole fish * Preheat the oven to 200øC/400øF/Gas 6. To make the salsa, place the pepper, tomatoes, spring onion, lime juice, sugar and seasoning in a food processor. Process until finely chopped.

Mix the milk and mustard, and the oats and pepper. Dip fillets into the mustard mixture, then oats to coat.

Place on a baking sheet, then bake for 20 mins. Serve with the salsa.
