Title: Garlic Shrimp

Yield: 1 Servings
Dry off 3/4 pound small shelled shrimp and sprinkle with coarse salt on each side. Allow to stand at room temperature for 10 minutes. In a glass or earthenware casserole, place 1/2 cup good olive oil, 3 large cloves garlic, coarsely chopped, and 1 dried red chili pepper, stemmed, seeded and divided into eight pieces. Heat in a preheated 375F oven until the garlic is just golden. Be careful not to overcook. Add the shrimp, toss it in the oil, and return the casserole to the oven. Cook for 5 to 10 minutes, or just until done, stirring several times during the cooking. Sprinkle in 1/2 tsp paprika, 1 Tbsp minced parsley, and perhaps a little more salt. Test by tasting before adding the salt.
