Title: Fried Whole Lake Trout

Vegetable shortening | ||
6 | tb | Flour |
1/2 | ts | Salt |
1/2 | ts | Black pepper |
1/2 | ts | Cayenne pepper |
6 | Whole lake trout,small* | |
1 | c | Buttermilk |
* - or any similar small fish cleaned & deheaded.
1. Heat enough vegetable shortening in a deep kettle to cover the fish completely. Bring to almost smoking or until a light haze forms over the hot fat.
2. Mix flour and seasonings together. Dip trout in buttermilk, then in seasoned flour. Lower into hot fat and cook 4-5 minutes, or until fish flakes easily when tested with a fork, turning only once. Remove to a heated platter and serve at once with lemon wedges and whole boiled new potatoes.
