Title: Baked Lemon Shrimp with Garlic

2 | lb | Large shrimp (abt 30), peeled |
1 | c | Butter (2 sticks) |
1 1/2 | ts | Salt or to taste |
1 | tb | Minced garlic or to taste |
1/2 | c | Flat-leaf parsley leaves washed, spun dry finely chopped |
2 | tb | Lemon zest (from 2 large lemons) |
2 | tb | Lemon juice or to taste |

Preheat oven to 450 F.
In a flameproof baking dish large enough to hold shrimp in one layer melt butter with salt over moderately low heat. Stir in garlic and half of parsley. Add shrimp and bake 5 min. Turn shrimp and sprinkle with remaining parsley, lemon zest, and lemon juice. Bake shrimp until just cooked through, 5-10 min more. Serve with rice and lemon wedges.
