Title: Shrimp Skewers

FOR EACH SKEWER YOU NEED | ||
6 | Shrimp; 41-50, tail on | |
1 | sl | Bacon; cooked until soft and cut in 3 parts |
3 | sl | Zucchini; 1/2" thick |
3 | sl | Sweet red pepper, 1" square |
3 | Cubes unsweetened pineapple | |
1 | 10-inch bamboo skewer |
Skewer ingredients as follows: Zucchini, bacon, shrimp, shrimp, red pepper, pineapple, zucchini, bacon, shrimp, shrimp, red pepper, pineapple, zucchini, bacon, shrimp, shrimp.
To cook: Brush skewers with a basting sauce made of melted butter cut with a splash of white wine (a cheap domestic chablis is fine), and sprinkle with seafood seasoning (McCormicks's, Old Bay, or something similar). Grill, turning once, until shrimp just turns pink. Be careful not to overcook.
Serve over rice pilaf. Three or four skewers would constitute a generous serving.
