Title: Cantaloupe Salsa
Categories: Fruit Sauce
Yield: 2 Cups

2cCantaloupe; diced
2tbRed bell pepper; minced
1tbJalapeno; seeded & minced
1tbCilantro; minced
1tbRice wine vinegar

Combine all ingredients in a nonreactive bowl. Chill for at least 1 hour.

Serve with pork, chicken or fish.

Makes about 2 cups, or 12 servings.
