Title: Cantaloupe Salsa

Yield: 2 Cups
2 | c | Cantaloupe; diced |
2 | tb | Red bell pepper; minced |
1 | tb | Jalapeno; seeded & minced |
1 | tb | Cilantro; minced |
1 | tb | Rice wine vinegar |
Combine all ingredients in a nonreactive bowl. Chill for at least 1 hour.
Serve with pork, chicken or fish.
Makes about 2 cups, or 12 servings.
