Title: Big Game Marinade

Yield: 5 Cups

3lgOnions, coarsely chopped
4lgShallots, chopped
3 Stalks celery, chopped, tops
  Included.
3/4cTarragon wine vinegar
1tbSalt
2clGarlic, minced
12 Crushed peppercorns
2lgBay leaves, crumbled
1 Bottle dry white wine

Put all ingredients in a large saucepan and bring to a boil. Lower heat and simmer for 5 minutes. Cool and pour over game pieces. Makes about 5 cups.

Use for: bear, venison, elk, moose, sheep, goat, buffalo
