3 1/2 teaspoons ground white pepper 5 dried hot chilies (2-3 In long) 1 1/2 teaspoons dried sage 2 teaspoons cumin seeds 1 teaspoon dried thyme 1 teaspoon dried oregano 1 teaspoon dried marjoram 1 teaspoon paprika 1 teaspoon dried savory 1/2 teaspoon garlic powder 1 teaspoon powdered ginger 1/2 teaspoon ground allspice Grind in spice mill till very 1/2 teaspoon grated nutmeg fine.
