Title: Lovage Soup

Yield: 4 Servings
30 | g | Butter or veg. margarine |
2 | tb | Wholemeal flour |
2 1/2 | c | Chicken stock |
1/2 | c | Milk |
1 | tb | Chopped lovage leaves |
2 | ts | Lemon juice |
Salt | ||
1 | tb | Chopped chives |
Yoghurt or sour cream |
Melt the butter in a saucepan, add the flour and blend to a smooth paste. Gradually add the warmed stock, stirring until thickened. Still stirring, add the milk, lovage and lemon juice. Simmer for 15 to 20 minutes, and add the salt. Puree the soup and return it to the saucepan. Stir in the chives and cook for a few minutes only.
Serve either hot or chilled with a swirl of sour cream or plain yoghurt, topped with a sprig of fresh lovage.
