Title: Borage Soup

Yield: 6 Servings
1 | c | Mashed potato |
125 | g | Borage leaves |
1/2 | ts | Salt |
4 | c | Chicken or vegetable stock |
Chop the borage leaves and put into blender with the mashed potato and salt and as much of the stock as may be added safely. Turn onto high for a few seconds until the borage is finely chopped and the mixture properly blended. Pour into a saucepan with the remainder of the stock. Add more salt if necessary. Heat and serve.
In summer this soup is delicious if chilled and served cold.
