Title: Passover Fudge Pecan Bars

6 | oz | Semisweet chocolate melted |
1 | c | Margarine* |
1 | c | Sugar |
1/2 | c | Brown sugar |
1 | tb | Vanilla |
1/2 | ts | Salt |
3 | lg | Eggs |
3/4 | c | Matzoh cake meal |
1/4 | c | Potato starch |
1/2 | c | Whole pecans, lightly toasted |
GARNISH | ||
1/2 | c | Semisweet chocolate, melted |
1/2 | c | Pecans, lightly toasted coarsely chopped |
NOTE: * unsalted butter can be substituted for non passover.
Preheat oven to 350 degrees. Lightly grease pan with oil or margarine a 8 x 10; or 7 x 11; even a 9 x 9 inch baking pan will do.
For the brownies: Melt the chocolate and margarine (or butter) over low heat Cool to room temperature. Stir in the rest of the brownie ingredients except whole pecans. When mixture is thoroughly mixed, fold in the pecans.
Spoon the batter into the prepared pan. Bake in a preheated oven for about 35 to 40 minutes OR until the top seems set and begins to take on a crackled appearance. DO NOT overtake. Brownies will be set and seem dry to the touch, but there should NOT be a dry crust around the edges.
For the garnish, drizzle melted chocolate over the brownies and dust with coarsely chopped pecans.
