Title: Passover Chocolate Raspberry Torte

CHOCOLATE TORTE
16ozSemisweet chocolate, coarsely chopped
1lbUnsalted margarine
1cKosher Cola
8lgEggs at room temperature
1cSugar
2tbVanilla
1/2cRaspberry preserves mixed with
1tsLemon juice
GLAZE
1cSemisweet chocolate chips
2tbMargarine
GARNISH
  Cocoa powder
  Whole fresh raspberries
  Chocolate leaves or fresh citrus or rose leaves

This recipe can be halved and made in an 8 inch springform pan.

Preheat oven to 350 degrees. Line the bottom of a 9 or 10 inch springform pan with parchment paper.

For the torte: In a heavy saucepan over low heat or using a double boiler, melt the chocolate margarine (or butter) and cola together, mixing well every once in while to combine. Set this chocolate mixture aside to cool.

Meanwhile using and electric mixer, whip the eggs with the sugar and vanilla for 10 minutes on high speed. Whisk the cooled chocolate mixture into the egg mixture and thoroughly incorporate. (The mixture will deflate but that is ok.). Stir in the raspberry preserves.

Place the springform pan on a baking sheet and pour in the cake batter. Place in the preheated oven and reduce the temperature to 325 degrees. Bake for 55 to 60 minutes until cake is done. The cake will have a slight crust and seems set. Remove from the oven. If the cake has risen over the sides of the pan, let the cake cool for 10 minutes, then tuck the cake back inside the rim so it will not break off as the cake cools and deflates.

Refrigerate several hours in the pan. The cake will deflate and settle.

For the glaze. Before serving, melt the chocolate chips with the margarine in a double boiler. Stir to melt evenly. Let cool. While glaze is cooling, remove the outer rim of the springform pan.

If desired, transfer the cake from the bottom of the springform to a serving plate.

Pour the glaze over the chilled cake. Let the glaze set for five minutes. Dust with cocoa and garnish with fresh raspberries and either chocolate leaves or fresh rose or citrus leaves.
