Title: Bubbe's Knishes

DOUGH
2cFlour
1/2tsBaking powder
1/2tsSalt
1 Egg
1/4cOil
LIVER FILLING
1/2lbLiver; beef, broiled, chopped OR
1/2lbChicken liver; broiled chopped AND
1/2lbBeef; cooked, and cubed
1/2cPotato; mashed
1 Egg
1 Onion; minced and browned with liver
2tbSchmaltz
1/2tsSalt
POTATO FILLING
4 Potato; cooked mashed
  Chicken fat; melted
  Salt
  Pepper; lots of pepper
  Unflavored bread crumbs if needed

1. SIFT FLOUR, BAKING POWDER, AND SALT into a bowl. Make a well in the middle of the dry ingredients.

2. In another bowl, beat egg, oil, and water and add to the well in the flour mixture.

3. Knead lightly until dough is soft; it will be slightly oily but not sticky. Cover and let it rest in the kitchen for at least an hour.

LIVER FILLINGS: Use either the chicken liver or the beef liver, and add the extra cooked meat to either. My Bubbe used to add cooked leftover beef to the liver all the time; but you can skip that and add the equivalent of liver. After you saute the beef [original stops here]

POTATO FILLING: Just cook and mash the potatoes. Season with salt, pepper, schmaltz and an egg to bind the mixture together.

If it is a little soupy (it depends on the potatoes); bind with a sprinkles of UNFLAVORED bread crumbs or matzo meal.

CONSTRUCTION:

1. Divide dough in half and roll as thin as possible into a rectangle. Spread the filling on long side of the dough and roll like a jelly roll.

2. Cut into 1" thick slices. Pull ends of the dough over the filling and sort of tuck into the knish to form small cakes.

3. Place on a well-greased baking sheet with one of the tucked in sides facing down. Bake in a 375 degree F. oven until brown.
