Title: Cream Cheese & Caviar Roll

Yield: 1 Roll
1 | lb | Cream cheese |
2 | oz | To 3 oz black or red caviar |
Soften cream cheese to room temp. Line a cookie sheet w/waxed paper. Spread softened cream cheese on waxed paper into a large rectangle. Using a spatula, spread caviar over cream cheese, reserving a small amount of caviar for garnish. Refrigerate about 10 mins, or until cream cheese starts to firm up. Roll cream cheese like a jelly roll, pulling waxed paper away as you shaped roll. Garnish top of roll w/reserved caviar & refrigerate until firm. Trim ends w/knife dipped in hot water. Serve w/crackers or bagel crisps. Makes 1 cream cheese caviar roll, enough for about 16 to 20 servings, depending on what other appetizers there are.
ADVICE FROM MAMA: This is a great appetizer for a party. To make it look even more festive, serve on a bed of chopped watercress & coarsely chopped red onion. The watercress & onion are particularly tasty w/ cream cheese & caviar. NOTE: This a great fancy-looking appetizer to make w/an inexpensive caviar. Don't use beluga even if you can afford it. It would be a waste. If you need help eating it, just call me up.
