Title: Kulukif Tremeno (Baked Zucchini Pudding)

2 | lb | (4) zucchini |
3 | Eggs, beaten | |
1/2 | lb | Farmer cheese or pot cheese, coarsely mashed |
1/2 | ts | ;salt |
1/4 | c | Bread crumbs or matzoh meal (during Passover) |
2 | tb | Butter |
Dairy dishes in the Greek community are popular, common, & diversified.
1. Peel off the thin green skin of the zucchini. Grated them on coarse side of hand grater or in a processor. Mix this w/eggs, cheese, salt, & bread crumbs. Pour the mixture in a well-buttered heatproof glass or metal baking dish, 8x8x2-inches. The mixture should be abt 2-inches deep.
2. Bake on a the middle rack of a preheated 350 degree F oven for 1/2 hr or until brown. Cut into 3-inch squares.
Serve warm. Serves 6 w/other dishes.
