Title: Orez Chamutz (Lemon-Flavored Beef & Rice)

5 | c | -Water |
1 | lb | Beef chuck, cut in 2-" pcs |
2 | c | Celery, cut into 1/2-" pcs |
2 | md | (1 cup) onions, chopped |
1 | ts | -Salt, or to taste |
2 | ts | Corn oil |
2 | Cloves garlic, chopped fine | |
3 | tb | Fresh lemon juice |
2 | c | Raw rice, well rinsed |
Here is an everyday Kurdistan preparation for family dining. The lemon juice should be used to taste & so additional juice can be served on side for anyone wants to emphasize flavor.
1. Put water, beef, celery, salt, oil, garlic, & lemon juice into large pan. Bring to a boil, then reduce heat to low, cover pan & cook for 1 hr, or until meat is tender. Remove beef & keep warm. 2. Put rice in same pan, bring to a boil, & reduce heat to very low. Cover pan & cook for abt 45 mins. The liquid will be absorbed by rice. Serve meat & rice separately. Serve warm.
