Title: Panjar or Shalgan (Beet Salad)

1/4 | c | Wine vinegar |
2 | tb | Olive oil |
2 | ts | Sugar |
1 | Clove garlic, chopped fine | |
1 | sm | (1/3 c) onions, coarsely chopped |
2 | lb | Canned beet slices, well drained |
1/4 | c | Stuffed olives |
The origins of salad are Spanish, Sephardic, & Turkish. If you ask the origin of a Greek or Turkish Jew, he will frequently reply, "Spanish". Their language is Ladino, the Spanish/Sephardic/Judeo language of those who left Spain in 1492.
1. Mix vinegar, oil, sugar, & garlic together well. 2. Put onion, beets, & olives in a salad bowl. Pour dressing over & toss salad several times. Serve chilled or at room temp.
