Title: Petticoat Lane Chicken Garlic Stew - Jjc

3 | tb | Olive oil |
10 | Garlic cloves; peeled | |
1/2 | c | Parsley; chopped |
1/2 | c | Celery leaves; chopped |
1 | ts | Dried tarragon |
1 | tb | Salt |
1 | ts | Ground white pepper |
1/2 | ts | Allspice |
1/4 | ts | Ground cinnamon |
1 1/2 | c | Dry white wine |
6 | Chicken leg and thigh pieces ;cut in two |
Don't let the garlic scare you- it's discarded after baking. _Very tasty_.
Preheat oven to 375 F degrees. Pour olive oil in a pot with cover. Add garlic and all ingredients including chicken. Cover tightly, place in oven for about 1-1/4 hours. The chicken does *not* brown. Discard garlic. Serve with bread. Makes 6 servings.
