3 | Young cucumbers, peeled & sliced thin | |
1 | md | (1/2 c) onion, sliced thin |
3 | (1 lb) firm ripe tomatoes, sliced thin | |
1/2 | ts | Salt |
1/8 | ts | Pepper |
1 | tb | Olive oil |
1 | tb | Wine vinegar |
1 | tb | Lemon juice |
3 | tb | Fresh Italian flat-leaf parsley, chopped |
1 | tb | Fresh mint, chopped |
Persian are not salad eaters in European sense but this one in its simplicity is close to our own tastes & most compatible w/rice and meat dishes. 1. Mix everything together & toss salad well. Serve cold. Serves 6 to 8 w/other dishes.
