Title: Sweet Potato Croquettes (Fritters)

2 | c | Mashed Sweet Potatoes |
3 | Eggs | |
3/4 | c | Pecans; chopped finely |
1/4 | c | Hot Cream |
1 | pn | Salt Cracker Crumbs; powdered |
Press potatoes through ricer. Add 2 well-beaten eggs, nuts cream and salt. More or less cream may be needed, depending on the consistency of the potatoes. Shape into flat rounds. Dip lightly in beaten egg, then in crumbs. Fry in deep fat (375F).
