Categories: Entree Pork Southern
Yield: 12 Servings
6 | lb | Ham; uncooked |
1 | cn | Plums; (1 lb.) |
2/3 | c | Sugar, brown; firmly packed |
1/4 | c | Water |
1 | tb | Mustard, dry; PLUS |
1 | ts | Mustard, dry |
Place ham, fat side up, in a 13x9x2" baking pan. Drain plums, reserving juice; set plums aside. Combine plum juice, brown sugar, water, and dry mustard; mix well. Pour half of glaze mixture over ham. Wrap foil loosely around ham. Bake at 325 degrees for 3 to 3-1/2 hours (about 30 minutes per pound).
Remove ham from oven about 30 minutes before cooking time is up. Score ham in a diamond pattern, making cuts 1/4" deep in ham fat. Spoon remaining glaze mixture over ham, and return ham to oven. Bake, uncovered, at 400 degrees for 30 minutes, basting frequently. Garnish with plums.
