Title: Smoked Ham with Apple Glaze

10lbHam, smoked; uncooked (to 14 lb.)
  Cloves, whole
1cApple jelly
1/2cSugar, brown; firmly packed
1tsMustard, dry
1/4tsGinger, ground
1/2tsCloves, ground
1/4cPineapple juice
  Grapes; opt.
  Watercress; opt.

Place ham, fat side up, on rack in a shallow roasting pan. Score ham in a diamond pattern, making cuts 1/4" deep in ham fat.

Insert a meat thermometer into center of thickest part of meat, making sure the point does not rest in fat or on bone. Bake at 325 degrees for 3-1/2 to 4 hours (about 18 to 20 minutes per pound) or until thermometer registers 160 degrees.

Remove ham from oven about 30 minutes before it is done. Stud with whole cloves. Heat apple jelly over medium heat until melted; add spices and pineapple juice, stirring until well blended. Spoon half of glaze over ham.

Return ham to oven; baste with remaining glaze during last 30 minutes of baking time. Lift ham onto a platter. Garnish with grapes and watercress, if desired.
