Title: Powter Grilled Vegetable Medley

MARINADE
1/2cLemon juice
2tbOlive oil
4clGarlic, crushed
2tsItalian seasoning
1 1/2tsSpike seasoning
VEGETABLES
6 Red potatoes, boiled until tender
2mdZucchini, sliced 1/4 inch thick lengthwise
2 Red or green bell peppers, seeded and sliced length- wise in
2 Red onions, sliced across the grain into 1/3 inch thick piec
1/2lbMushrooms
1lgEggplant, peeled and sliced into 1/2 inch thick pieces

Combine lemon juice, olive oil, and seasonings. Pour over vegetables in a big bowl. Let marinate for at least one hour, longer if desirable. Cook over hot coals approximately 10 on each side. Serve over hot brown rice and pour remaining marinade over all.
