Title: Navy Beans Les Tarragon

1 | tb | Olive oil |
1 | c | Onion; diced |
1 | c | Domestic mushrooms; quartered |
1 | c | Scallions; thinly sliced |
1 | c | Leeks; thinly sliced |
1 | ts | Dried leaf tarragon |
15 | oz | Canned navy or great northern beans; drained |
1/2 | c | White wine |
1/2 | c | Soymilk powder |
2 | ts | Dark miso |
1/2 | tb | Lemon juice |
Red bell pepper; diced, for garnish | ||
Scallions; sliced, for garnish |
In a large nonstick skillet, heat oil. Add onion, mushrooms, scallions, leeks and tarragon; saute until onions are transparent, about 5 minutes. Stir in beans; reduce heat to medium-low.
In a bowl, whisk together wine, soymilk powder,miso and lemon juice. Add to skillet; simer gently 5 minutes. Garnish with scallions and bell pepper if desired. Makes 4 servings.
Helpful hint: If you plan to serve this over a pasta or grain, double the amount of wine, soymilk powder, miso and lemon juice to make more sauce.
